Asagonomatsu Betsujikomi Honjozo
Description
Using “Hyogo-ken san Yamada Nishiki” rice, this honjozo is polished to 60% to meet ginjo class standards. It presents a pleasant aroma reminiscent of bananas that swiftly expands, beautifully fading with a refreshing citrus-like acidity. Designed to cleanse the palate and enhance subsequent dishes, it offers a more evolved flavor compared to “Atago no Matsuy Honjozo,” ensuring enjoyment until the very last sip.
The backstory of “Betsushikomi Honjozo” dates back to the old brewery era, where one specific tank, Tank 63, consistently produced excellent quality sake. The sake brewed in this tank was sold as “Betsushikomi,” marking the beginning of its unique identity, which is also noted on the label’s band. Currently, only selected high-quality batches are provided as Betsushikomi Honjozo.
