Enjoy the refreshing aroma of wakakusa and lychee, along with the rich umami of omachi rice and the dignified flavor of junmai daiginjo. Experience the gentle taste of “Houou,” which embodies the depth of flavor through a meticulous craft that represents the struggle between the toji and nature. To polish the Yamada Nishiki rice to below half its original size, up to 40%, it takes 65 to 70 hours of milling. Following that, the process includes steaming, koji making, and the careful preparation of the yeast starter, all of which demand great attention from the toji. The moromi fermentation process can take nearly 50 days, allowing for a slow and steady fermentation.
With a slight sweetness and a refreshing acidity, “Houou” is sake that emerges after being bottled and heat-treated while still in its original unaltered state. It can be enjoyed well chilled or on the rocks. Experience this gentle flavor for yourself. *Yamada Nishiki production version was discontinued at the end of 2022.*
