Hatsukame Junmai Daiginjo is carefully brewed using the same methods as Daiginjo, based on the toji’s belief that “Daiginjo is an extension of ordinary sake making.” It aims to be the “ultimate evening drinking sake” that accompanies the daily lives of local customers who regularly enjoy Hatsukame. While the sake is dry, you can savor the refined sweetness of the rice derived from Yamada Nishiki. Ordinary sake most vividly reflects the brewery’s philosophy, showcasing Hatsukame’s passion for sake brewing.
