This sake is bottled without any additional processing, simply filtered from the fermentation process. It contains active yeast, whole rice, and koji mold, all essential for alcohol fermentation, allowing it to continue fermenting within the bottle. Enjoy the “puchi puchi, shuwa~” texture. The brewery checks daily for aroma, sound, appearance, and the feel of stirring, confirming the fermentation state. This season’s “Domuroku” promises to deliver the same delightful “puchi puchi, shuwa~” experience as last season. Enjoy the particularly vibrant effervescence of this sake immediately after bottling. “Keiryuu Domuroku” is a secret sake meticulously brewed based on historical documents passed down through generations at Endo Shuzoujo. To maintain flavor and quality while continuing fermentation in the bottle, a special patented cap design allows for gas release without spilling, even when stored on its side. However, prolonged horizontal storage can lead to leakage if gas release is not possible. Always store upright in the refrigerator and gently shake the bottle before opening to evenly distribute the sediment.
